Chia seed pudding with coconut and mango

I can't believe I didn't try chia seeds before, but I can't try out everything in one go! Anyways, now it was time to see what the chia seeds were like. I was sceptical at first and the rest of the family looked at the pudding and said, 'No way am I going to put that stuff in my mouth!' My daughter called it frogspawn. Well, look at them all now- I can give my children and husband a bowl of the pudding and they'll eat it with pleasure. So looks don't always count. But I have to add that they'll only eat it mixed with fruit. Well, atleast they are eating it. I made the pudding with coconut and mango which is lovely. It's a fresh pudding nice to eat in the morning. Amazing health benefits as well! If you still don't know what is in chia seeds then you really should check it out. What I find amazing about these seeds is that the chia seed oil contains a concentration of omega-3 fatty acid of approximately 60%! This is amazing stuff! Forget the poor fish! Just eat chia seeds and you needn't worry about your omega's. Then add to that that the chia seeds contain many vitamins, minerals and anti-oxidants. So it's worth giving the seeds a go!

To make a bowl of pudding put about 2 or 3 tablespoons chia seeds and 2 tablespoons grated (dried) coconut in a bowl with rice milk. I usually leave this in the fridge overnight. You need to add about half a cup of milk. The next day the milk will be soaked up by the seeds and I don't like the pudding so thick so I add more milk and mix well. Then to sweeten the pudding I use agave syrup. Put the pudding aside and peel and slice a mango. Add the mango to the pudding and enjoy this amazing healthy breakfast!
